WINE CAKE


Edeen & Doc started making this cake in the 1980's. Folks lick their fingers clean when we take this to the church fellowships! Try it with a glass of Miss Scarlett or Sweet Magnolia!

 

1 Butter Recipe Cake Mix

1 stick butter/ margarine

3 eggs

Sweet White muscadine wine

(Southern Belle, Blue Bayou or Sweet Magnolia)

1/4 tsp grated nutmeg

1/2 tsp cinnamon

1 cup chopped pecans, plain or toasted

 

Combine ingredients and mix according to the package instructions, substituting wine for water. Pour into a greased and floured tube pan, or other pans. Bake at 325º for 45-60 minutes, until done. Cool for 10-15 min in the pan before removing to finish cooling. While the cake is still warm, top with glaze.

 

 

WINE CAKE GLAZE


1 cup confectioners sugar

1/4 tsp vanilla

1 Tbsp milk or wine

 

Combine ingredients with a fork. Drizzle over warm cake.

MUSCADINE MARGARITAS


One of our customers from south Louisiana shared this recipe with me! Our favorite wines to use are Miss Scarlett or Blue Bayou. Just about the most refreshing beverage you can drink on a hot summer day!

 

Put the following into a blender:

1 can frozen limeade

fill the can with tequila

fill the can with white/rose’ muscadine wine

fill 1/2 can triple sec

 

Top off the jar with ice & BLEND until smooth. Add sugar to your taste. Rim the glass with either salt or sugar, whatever your preference.

 

 

 

 MUSHROOMS IN WINE


A French chef in Natchez taught me how to make this delightful side dish to Beef Wellington. We have found this to be suitable for any beef or deer meat. Young chefs will enjoy helping with this one!

 

2 cups (1 container) portabella mushrooms, sliced

½ - 1 stick butter; depending on your diet!

Approximately ½ cup red muscadine wine

Salt & pepper to taste

 

Melt the butter in a small skillet, add the mushrooms and sauté until just tender. Pour in the wine, reduce the heat and allow to simmer until the liquid reduces by half. Sprinkle with salt and pepper to taste. ENJOY! (You can adjust the quantities on any of the ingredients, as to your wants.)
