Doc & Edeen's Muscadine Wine Cake

 

This is one of our most requested recipes. Guests visiting the Galbreaths home would often request a Wine Cake; and Doc would bake one to take to the church on Men's Dessert Night!  

1 Butter Recipe cake mix PLUS all ingredients

1/2 cup white or rose' Old South muscadine wine
1/8 tsp grated nutmeg
1/2 tsp ground cinnamon
(OPT) 1 cup chopped  pecans
 
Lightly grease and flour a tube pan or 9"X13" cake pan. Preheat oven to 325 degrees.
 
Mix the cake according to the package directions, substituting wine for about 1/2 the water called for in the mix. Beat in the nutmeg and cinnamon, then add the chopped pecans. 
 
Pour into the prepared cake pan. Bake until done, about 1.25 hours for the tube pan. Remove from the oven and cool on a wire rack. You can glaze it with a powdered sugar/ milk/ vanilla glaze.
 
FAT FREE CAKE: Use a yellow cake mix and follow the no-fat directions on the box, substituting wine for the water.
